| Lutein
is a nutrient found in green leafy vegetables such as
spinach, kale, and broccoli that can help preserve your
sight. But if you find it difficult to get enough of
these vegetables in your diet, turn to eggs.
Researchers
at Tufts University recently compared the amount of
lutein absorbed by the body from four sources: spinach,
a lutein supplement, a lutein-ester supplement, and
lutein-enriched eggs, and it turned out that the highest
level of the nutrient was absorbed when the subjects
ate eggs.
When
chickens are fed a diet high in lutein, the nutrient
is passed on to people, and the enriched eggs increased
the level of lutein in people an average of two times
more than spinach and three times more than either supplement.
