Prevention, September 2003

No single food will reduce your cholesterol level, but researchers recently summarized some of the studies which looked at what foods might help bring cholesterol down by up to 30 percent. They recommend eating the following foods every day.

Food
Servings Per Day
Plant sterol margarine (ex.: Benecol) Three 1/2 T. servings
Soy milk Three 8 oz. glasses
Soy yogurt 6 oz.
Almonds 20 to 24
Oat-bran bread 1 1/2 slices
Oat-bran cereal 1/2 cup
Barley 1/4 cup four times a week
Beans (northern, kidney, lentil), cooked 1/2 cup
Fruit and nonstarchy vegetables (starchy vegetables are potatoes, corn, etc.), but you can include eggplant and okra 11 servings
You'll also want to keep many of your main dishes vegetarian; try vegetarian chili or curry, soy burgers, soy deli slices, and beans.
